The only thing that I feel should be changed is the mushrooms. They don't cook down properly. They end up being rubbery and chewy. That texture isn't too pleasant. I'm not just speaking with the kimchi. It's the same with the garlic mix also, and I'm sure it's like that for the vegetable one too. Something needs to change with that.

    Shelf life is 15 months if sealed and stored in a cool and dry area.
