This creamy spicy garlic ramen tastes like something you'd wait in line for, but it comes together in about 20 minutes. The secret is the broth: egg yolks, spicy Kewpie mayo, and a slice of American cheese get whisked with hot noodle broth into something silky, rich, and a little spicy. Our spicy garlic toppings cook right in with the noodles so the flavor goes all the way through. Finish it with soft-boiled eggs marinated overnight in soy, rice vinegar, and sesame oil for that perfect jammy center, a spoonful of chili crisp, and our fish cakes if you have them. Make the eggs the night before and this one's an easy weeknight upgrade.

Ingredients

Marinade for eggs:
1/2 cup low sodium soy sauce
1/2 water
1/4 cup rice vinegar or mirin
1 tbs sugar
1 tsp sesame oil

Protein Ramen Chicken Soup (2)
Spicy Garlic Ramen Toppings

Broth:
1 packet of seasonings
4 1/2 cups of water
2 egg yolks
2 tbs spicy kewpie mayo
1 slice of american cheese
1/2 cup of the broth from the noodles

Spicy chili crisp

Directions

1. Marinate the eggs: Boil the eggs for 7½ minutes, then immediately transfer to an ice bath. Once cool, peel and place in a container with the soy sauce, water, rice vinegar, sugar, and sesame oil. Refrigerate overnight.
2. Cook the ramen: Bring 4½ cups water and 1 seasoning packet to a boil. Add 2 noodle pucks and cook for 6 minutes. At the 3-minute mark, add your Spicy Garlic Toppings and let them cook with the noodles.
3. Make it creamy: In your serving bowl, combine the remaining seasoning packet, 2 egg yolks, spicy Kewpie mayo, American cheese, and ½ cup of the hot noodle broth. Mix until creamy and smooth.
4. Build the bowls: Add the cooked noodles, then pour in your desired amount of broth and mix everything together.
5. Finish it: Top with the marinated eggs, chili crisp, extra Spicy Garlic Toppings, and fish cakes if using.
